Everyone should have a delicious Vegan-friendly recipe in their drawer. You never know when you’ll need it! Plus, vegan food is much more healthy than non-vegan food! This recipe is for peanut butter-oatmeal-banana cookies. Remember, it’s only sugar-free if you use unsweetened peanut butter and unsweetened soymilk so make sure you do!
-1/3 cup peanut butter
-2 ripe-overripe bananas
-1 teaspoon vanilla
-2 tablespoons soy milk
-2 tablespoons REAL maple syrup
-2 1/2 cups quick cooking oatmeal
-pinch of cinnamon
-1/4 cup flour
In a large bowl, mash bananas with a fork until smooth. Add peanut butter, soy milk, vanilla and maple syrup and mix well. Add remaining ingredients and stir until well combined.
Drop spoonfuls of dough onto an ungreased cookie sheet and bake 13-16 minutes at 350 degrees, or until done.
